We picked up 2 refurbished Xserve's on eBay from a good company, we already had one Xserve in house. I would recommend using the Xserve (early 2009) model if you are going to do this. Things are working well so far, I'm fairly new to VMware and learning new things daily. We are using iSCSI SAN for storage on a "home grown" NAS. Right now I have a 4 VM servers running and am working this summer to migrate 6 physical servers to the VM environment. We are running VMware ESXi 5.0 on all 3 hosts. I have 3 Xserve's, dual CPU, 8-core models. I am doing OSX server virtualization utilizing Xserve (Early 2009).
